Instructions

Roughly chop the parsley and add to a bowl.

Cut all the cucumber, bell pepper, Roma tomatoes, avocado and red onion into small cubes and add to the bowl.

Drain the lentils and add to the salad.

Add olive oil, salt, freshly cracked pepper and the Mediterranean herbs.

Optional: Add a dollop of hummus to give the salad more body.
