Ingredients
150 grams soy beans
1/3 cucumber
1 avocado
1 spring onion
1 hand parsley or cilantro
Drizzle of oil or sesame oil
1 teaspoon of soy sauce
Squeeze of lemon
Salt & pepper
Instructions

Wash the cucumber and cut it into cubes.

Halve the avocado, remove the pit, and cut the flesh into cubes.

Clean the spring onion and slice it.

Roughly chop the cilantro or parsley, or both.

Add the edamame, cucumber, avocado, spring onion, and parsley to a bowl.

Drizzle the ingredients with oil, soy sauce, and lemon juice.

Season with salt and pepper to taste.

Optionally, garnish with black sesame seeds for a pop of color.
