Roughly chop the basil and place it into a hand blender or food processor. Set aside a few sprigs for garnish.

To the chopped basil, add 3 tablespoons of aquafaba, 2 teaspoons of mustard, and the juice of half a lemon. Blend these ingredients until you obtain a smooth paste.

While the blender is in operation, slowly drizzle in 100-150 mL of olive oil until the mixture is thoroughly combined.

Serve and enjoy your basil mayo! It pairs wonderfully with Turkish bread, avocado, and tomato. Garnish with the reserved basil sprigs for an extra touch of freshness.
